White Bean and Roasted Pepper Dip

Besides being tasty, this dip looks great! The contrast of the red pepper on the white base makes this an attractive dish to both of the senses: sight and taste. The reason for making this a 12 serving recipe is because the beans come in a 15 ounce sized can; if it's too much you can freeze some or just make less. Serve this condiment with crackers, potato chips, toast, or your choice of bread.
 
Difficulty (Scale from 1-10): 3

Makes: 3 cups
Serves: 12
Prep Time: 10 minutes
Total Time: 15 minutes

Ingredients

1 (15 ounce) can of cannellini beans - drained
2 cloves of fresh garlic
2 tablespoons of fresh lemon juice
1/3 cup of olive oil
1/4 (loosely packed) curly parsley
Salt to taste
Black pepper to taste
1 cup of roasted peppers - drained


Preparation

In a food processor place beans, garlic, olive oil, lemon juice, and parsley, blend/process until mixture is uniform. Add salt and pepper to taste.
Add roasted peppers to food processor and pulse until the roasted pepper pieces are approximately 1/4 inch square in size.
